Ingredients

  • 1 head broccoli

  • 2tsp dried fruit- any

  • 2 tsp nuts- any

  • 2tsp vinegar of choice

  • 2tsp vegetable oil

  • 1tsp mustard of choice

  • 3tsp olive oil

  • 1tsp canola oil

  • 1/2 tsp water

  • salt and pepper to taste

  • pinch sugar 

Step by Step Instructions

Step 1

Trim 2-3cm off the base of the broccoli and while using a small knife peel the stem.Cut the broccoli into 4 pieces.

Step 2

If you like you can roast the nuts for improved flavour. Bake at 180 degrees and cook until golden.

Step 3

Place the broccoli into a blender and blend to a coarse crumb and place into a bowl for tossing.

In a bowl mix together the mustard and vinegar and then whisk in the oil, sugar and seasoning.

Pour this dressing over the broccoli, season and toss through.

Step 4

Scatter some nuts and fruits through the salad but save some to go over the top.

Step 5

Feta cheese or some grilled halloumi or paneer would go perfectly with this salad.
