Brined and Blackened Chicken with Lemon & Chilli

To help achieve maximum flavour and tenderness the chicken is first brined for 2 hours, rubbed in blackened seasoning and grilled to develop the BBQ taste.

This dish is served with warm grilled potato, cream cheese and bacon & nut crumble, and a chopped broccoli salad with fruit and nuts.
