Breaded Chicken with Sausage, Beans & Potatoes
This Wednesday’s hot dish is marinated and crispy-fried chicken pieces with a sausage, potato, and mixed-bean cassoulet. Similar to gumbo, with a base of garlic, onion, and smoked paprika, the beans are cooked with crispy fried bits of delicious pork breakfast sausages, potatoes, herbs, and chicken stock. We’ve marinated the chicken in a salt, sugar, and spice cure for 48 hours for maximum tenderness and flavour profile.
