Chicken Katsu
We wanted to offer a savoury supper dish for everyone attending the craft market, with no possibility of a hot dish. A no-brainer, it just had to be chicken katsu.
Breaded chicken, crispy fried twice, served with sushi rice splashed with mirin and rice vinegar, pickled ginger, vegetable and cabbage fine slaw, crispy onions, spring onions, pickles, Kewpie mayonnaise, sweetened soy, and toasted sesame seeds.
This is the classic dish that’s hugely popular as a lunch option.
Please remember that this is a cold dish and is supposed to be eaten cold. If you want to heat it, no drama, but we won’t have heating facilities at this event.
