Chinese Roasted Chicken with Egg-Fried Rice
Whole chicken is first blanched in boiling water to tighten the skin, iced to chill and marinated in numerous spices including dark soy sauce, garlic, ginger, mirin, pickled ginger, tomato, tomato paste, oyster sauce, chilli, sesame oil, premium soy, and honey for 24 hours before roasting and basting the glaze over racks. The chicken just oozes flavour. The dish is served with egg-fried rice and vegetables.
