Chinese Roasted Chicken with Coconut Rice and Spiced Mango Chutney

Marinated in fermented soy, ginger and garlic for 24 hours before roasting over racks, the chicken just oozes flavour. Served with sticky coconut rice and my special spiced mango chutney.
