Passionfruit and Banana Fool with Yoghurt and Meringue

Bananas roasted with lemon and spices, fresh passionfruit, sponge and vanilla custard cream finished and balanced with natural yoghurt and Swiss meringue.

The passion fruit was grown in the Taranaki region of New Zealand for this dish.
