Roasted Chicken with Sausage & Fennel Stuffing

Chicken is first rubbed with Moroccan spices, stuffed with fragrant sausage and roasted and basted in garlic oils. Served with Moroccan spiced couscous, apricots and cashew nuts and a side salad of spinach, avocado and bacon with aioli dressing.
