Chinese Roasted Chicken, Coconut & Mango Rice, Steamed Green Vegetables with Asian Dressing

We’ve been asked to do our Chinese-roasted chicken, so tomorrow it’s on. Served with coconut and mango savoury rice, steamed green vegetables, and Asian dressing.

We marinade the chicken overnight after blanching it in hot water to tighten the skin and tenderise the meat and make it aromatic.

Portion sizes are about 900g.
