Summer Berry Pavlova with yogurt, cream (V, GF)

This classic Kiwi dessert is eaten by the masses during the summer and Christmas seasons. We bring you our version of this crisp, chewy meringue-based dessert finished with both yoghurt and cream (as we think the meringue is already sweet) and poached summer berries, lemon and vanilla. A few fresh thyme leaves over the top and berry fluid gel to lift the whole dish to another level. Pavlova like no other.

We use agar agar to thicken and set the fruit so is perfect for vegetarians.
