Step by Step Instructions
Beat the eggs using a fork until they’re a liquid consistency. Season with salt and pepper.
Heat a small frying pan (non-stick is best) over a medium heat, add the oil. Heat for 1 min.
Pour the beaten eggs into the pan and while using a spatula gently stir the eggs until they begin to clump together and form. When this occurs stop stirring and move any raw egg to fill in any holes (if any).
Lower the heat and add your fillings. Cook on a low heat for 30 seconds to a minute.
Using the spatula, Prise the omelette from the sides of the pan but sliding the spatula around the edge. Bang the pan lightly to help free the bottom. Fold over one third into the middle and do the same on the other side.
While holding the pan the opposite way around, with your little finger or pinkie nearest the handle, pop the omelette onto a plate and serve. It should be slightly runny in the centre which is known as baveuse.
