Ingredients

  • 500g dried penne pasta
  • 2 zucchini- small dice
  • 200g smoked streaky bacon
  • 1 onion- finely chopped
  • 1 chilli- finely chopped
  • 300ml cream
  • 100ml milk
  • 3cloves garlic- finely chopped
  • 40ml olive oil
  • 35g grated parmesan
  • salt and pepper to taste

Step by Step Instructions

Step 1

Start by placing a large pot of water on a high heat to boil for the pasta. As soon as the water starts boiling, add salt and pasta, cook until al dente, or firm to the bite (approx 10mins)

Step 2

Place a large frying pan onto a high heat, allow to heat for 2mins, add oil and then onions. Cook the onions for 2mins, add bacon, chilli and garlic and cook for a further 2mins.

Season to taste. While cooking over a high heat, add zucchini to the bacon and onions and cook for another 3mions or until lightly browned.

 

Step 3

Add cream and milk to the frying pan and half the cheese. reduce on a high heat for 2-3mins or until very slightly thickened. Remove from the heat.

Step 4

Place the drained pasta onto the creamy sauce and on a high heat cook, stir and reduce the sauce onto the pasta. Only reduce on high heat for up to 3mins. The sauce shouldn’t be reduced completely as the sauce will thicken as it sits prior to serving.

Step 5

Once the sauce has been partially reduced and is slightly thickened, remove from the heat and season with the rest of the cheese, salt and milled pepper. Leave the pasta to sit for 2mins before serving.

Step 6

The pasta will always taste far superior in taste when allowed to sit prior to serving.

I sprinkle olive oil, parmesan and milled pepper when portioning this dish.
