Ingredients
- 1 shallot or onion-chopped
- 2 cloves garlic
- 90g butter
- 90g flour
- 1.1lit milk
- 1/2 tsp English mustard
- 100g cheese-grated
- salt and pepper to taste

Step by Step Instructions
Step 1
Heat a medium frying pan over medium heat for 1min.
Add shallots or onions and cook for 3mins.
Add flour to pan and cook for 3mins stirring all the time.
Step 2
Add 1 cup of milk and gently stir until completely mixed through.
Season with salt and pepper.
Add another cup of milk and stir until mixed through. Do this with the rest of the milk. Season a little.
Step 3
Cook the sauce over low heat for 30mins.
Remove from the heat and stir through the cheese and mustard. Season to taste.
Cover with glad wrap until ready to use or it will form a skin.
Sauce will store for up to a week in a refrigerator or in a freezer bag frozen for up to 3 months.
