Ingredients

  • 200g halloumi cheese

  • 2tsp canola oil
  • 1 1/2 tsp curry powder
  • 1 egg
  • 40ml milk
  • 80g dried breadcrumbs
  • 50g seasoned flour
  • 3 tomatoes
  • 2tblsp olive oil
  • 1 spring onion-thinly sliced
  • 3tblsp tomato relish, can be bought or home-made
  • 1/2 lemon-juice only
  • salt and pepper to taste
  • 400ml vegetable oil for frying

Step by Step Instructions

Step 1

Open the halloumi from its packet and slice width-ways into 1/2 cm thick slices.  Try not to slice them too thick otherwise they will remain chewy. 

Arrange slices onto a tray or plate. Scatter curry powder and canola oil over the cheese. Leave to flavour for 5mins. 

Step 2

In a hot pan over a medium to high flame, OR a griddle top, grill both sides of the cheese ensuring to wait until the pan or griddle top is hot before grilling the halloumi.

Once grilled set aside. 

 

Step 3

After 5mins coat the cheese with crumbs. Whisk together the milk and egg.

Coat each slice of halloumi first with seasoned flour, shake off the excess, then into beaten egg and milk, shake off the excess, and finally into breadcrumbs. Place into the fridge until ready to start frying. 

 

Step 4

To make the salsa is super easy. Firstly cut the tomatoes into medium sized dice remembering to remove the eye of the tomato. Season the tomatoes with salt and pepper.

Add spring onion, relish, lemon juice and olive oil to the diced tomatoes. Season to taste. Leave in the fridge to rest for 10mins. The salsa will develop juice while sitting in the fridge. 

 

Step 5

In a pot or deep pan heat the vegetable oil over a high flame. Tear a piece of bread into the oil and once it starts browning, you know your oil is hot enough. Reduce heat to medium high.

Step 6

Fry the halloumi in 2 batches until golden brown. Place onto paper towel to dry the grease. Season lightly with salt and pepper.

Step 7

Serve this dish with tomato salsa and a little salad if you like. Perfect vegetarian item that gets flavour from both grilling, spice rub and the golden crumb.
