Ingredients
- 1 kumara (200g)- peeled
- 1 white onion- peeled
- 1 stick rosemary
- 25ml vegetable oil for roasting
- 100g button mushroom- cut into 1/4s
- 100g paneer- cut into 2cm cubes
- 2 cloves garlic-smashed w skin
- 500g baby spinach washed and drained
- 1tsp Dijon mustard
- 1 lemon-juice only
- 2tsp maple syrup
- 30ml olive oil
- 30ml vegetable oil
- salt and pepper to taste

Step by Step Instructions
Step 1
Pre-heat oven to 200°C
Cut the kumara into 2cm cubes.
Cut the onion in half and cut each half into 4-6 pieces.
Place onions and kumara into a pot, cover with water, season with salt and bring to a boil. Drain in a colander.
Step 2
Place onions, kumara and mushrooms onto a lined tray, drizzle vegetable oil over, and season with salt and pepper. Rip the leaves from the rosemary and scatter them over along with the garlic slices.
Put into the preheated oven and roast until golden brown or for between 20-25mins.
Step 3
Place paneer into a bowl and cover with hot water from the tap (not kettle). Leave to soak while the kumara is roasting.
Step 4
To make the dressing, pour lemon juice into a bowl. Add mustard, maple syrup and a bit of seasoning. Whisk together for i min and then while whisking, drizzle in both oils.
Season to taste.
Step 5
This salad works by adding warm roasted ingredients to cold spinach in order to slightly wilt the leaves.
Once the kumara, onions and mushrooms are golden and tender, remove from the oven.
Step 6
Place the baby spinach into a large bowl.
Drain the paneer and season with a little salt. Mix through the warm vegetables and then pour all the vegetables on top of the spinach.
Drizzle some dressing over and lightly toss through.
Season to taste.
Step 7
Warm salads are hugely popular in my household. Next time you have a roast meal and have left-overs, simply warm up the vegetables, chop the meat and toss through some salad leaves.
Watercress, spinach, iceberg, rocket, cabbage and oak-leaf are all salads suitable for this type of salad.
